This simple to prepare salad can stand on its own as a salad or can be used to make wonderful and quick to prepare burritos.
1 Can black beans, drained.
1 Can yellow or white corn, drained.
½ cup chunky Salsa (regular, medium, or hot as preferred)
3 T chopped fresh Cilantro
1 ripe Avocado, chopped or dices into small ½ inch cubes.
Salt and Pepper to taste.
Combine all ingredients into mixing bowl.
Serve by itself, or with warmed tortillas. Or use as filling for burritos by adding with a serving of brown rice.
Makes 3-4 servings. Vegan.
